Zucchini Bread
4 C. Coarsely Shredded Zucchini
3 C. Flour
2 C. Sugar
1 1/4 C. Vegetable Oil
4 Beaten Eggs
1 Tbsp + 1 tsp Vanilla
1 Tbsp Cinnamon
1 1/2 tsp Baking Powder
1 C. Chopped Nuts
Preheat oven to 325 degrees. Grease bottom only of two 9 x 5 x 3 inch loaf pans. Blend all ingredients on low speed for 1 minute. Beat on medium speed for 1 minute. Pour into pans. Bake until wooden pick comes out clea when inserted in the center. 50 minutes to 1 hour. Cool 10 minutes.
Remove from pan.
{A coleslaw cutter is wonderful to grate zucchini}
